It’s that funny time of year.
People’s January diets have long since failed and giving up chocolate for lent was never going to happen. But with Spring fast approaching and the desperate need to hibernate subsiding, we are left wanting to eat lighter meals whilst still craving those winter comforts.
So what to do? How can we make the transition into our Summer diet, without giving up on those comfort foods we’ve got used to over the last 5 months?
When it comes to food, the feeling of comfort seems to come from warmth, thick and chunky textures and earthy, meaty flavours so perhaps the answer is to combine these with leaner meats, more veg and smaller portions for a crave free dinner every evening…
Here are my Top 5 healthy but comforting meals to help you out of the cottage pies and into the garden salads:
Lean turkey & sweet chilli burgers with sweet potato wedges
Spaghetti with prawns, sun-dried tomatoes, lemon zest and rocket
Warm pita breads with Greek salad, hummus and tzatziki
Chicken and Mediterranean vegetable skewers with garlic bread
Conchiglie (pasta shells) with bacon, garden peas and creme fraiche, and of course a big squeeze of lemon!
